What are the odds Josh has a meth habit, and he only is buying the nicest most crystal meth he can get? While his internet activity does not show classic signs of meth use like 2 day binges, Josh does show more severe mood swings than ever like with the Turkey Tom incident.

It could be too that he is just a fat fuck and is getting Door Dash Uber Eats 4 meals a day. That would add up fast on his bank account and also is likely to bring Josh into regular contact with the Indians he hates so much. Meth actually sounds like a plausible theory for Jersh's mood swings because meth has been known to cause increased aggression along with increased paranoia within long-term users (this may explain why Jersh puts on gloves to hide his hands on camera because he fears people may ID him through a camera via his fingerprints; paranoia caused by potential meth use).

Jersh also lives in the deep south (allegedly) where hard drugs like meth are common there.

So it wouldn't surprise me much if Jersh is buying meth from his local Walter White and does the stuff off camera.
