Since no one else has replied to the thread yet, I'll go ahead and bite. I am currently reading through the Star Wars: Legacy of the Force series of novels. I've been enjoying them, so far.

Anything from Expanded Universe is ace. Would recommend checking out Death Troopers when you can.
