Anyone else here who has gotten interested in home servers?

I am currently getting the parts for one myself. I have an HP EliteDesk 800 G2 Mini 65W which I plan to use for a simple file storage system and as a chatroom for my friends. I'll need to get an i7-6700 CPU, 32GB of DDR4 SODIMM, an M.2 2280 NVMe SSD to boot from, and a 2.5in 2TB SATA HDD or SSD. That is way more than enough for what I need for a long time, but if I need more, I will expand. My ISP forbids publicly hosting anything except *maybe* game servers, so my file storage and chatroom system will require I2P or Tor to be accessible by my frens. If I ever get a less restrictive ISP, I will likely host email and other services for me and frens though.

I have considered a vanilla Minecraft server too, assuming my ISP doesn't restrict that as well and assuming I have more than enough power to run it alongside everything else. Anything you lot have setup, messed around with, or no?
 
I have an old tube TV I got for $1 and was looking at streaming media to it. I don't know much myself but was looking into a jellyfin setup
